I'd have to say the Spaceship levels on Episode II. They seriously rock, music needs to be turned up loud, and the boss is hella cool!

Seabed has the coolest enemies and the level`s looks are very nice aswell, followed by (ultimate) mines.

Mine HAS to be central control, it has so many areas (control tower is a nice touch)
