not very often. He usually sells resist/saints at the highest at his lv. but u can find resist holies out of ruins boxes

also get a better armour cuz the absorb armor isnt very good. Try getting an imperial armor

no defence is COMPLETELY useless against falz because every attack he uses if magic based or has set damage so defensive units wouldnt help
