After reading this again, I have come up with a few ideas for you. You could include something about the Emperor Constantine and how he made it the official religion of the Roman Empire. You could also say something about the fact that the monks/friars/priests were virtually the only ones in that time period that could read and write. Hence they influenced all literature from that time (don't know where you would tie it in.) You could also say something about the effect of catholicism on the daily lives of the people.
Also, the Franks were part of the barbarians invading Europe so you don't need to say it eventually led to a lot of influence with the Franks. That was bound to happen when the Franks invaded Europe.
Just a suggestion but you could change it from the founding of the Catholic church in Rome to just the founding of the Catholic church. By saying in Rome it seems to me that you are limiting yourself a bit on the possible effects.
