You hit lv 200 at about 83,000,000 EXP.... Then what happens is: you shout "YEAH! I P\/\/|\|3|) _|00!" before you go out and celebrate by getting drunk on very cheap liquor. 
The EXP meter only can go up to 99,999,999 EXP so maybe after you hit that it just stops counting, starts to cover up the letters with the numbers, or it goes back to 0. I think Kefka is the only guy here with a legit lv 200 character, you'll need to ask him.
