As A RAmarl I would suggest hunting a better weapon than the Holy Ray anyway, maybe a rifle or a mechgun type, handguns don't really suit for bosses that are close by.
A Slicer can actually do some nice damage to the screens, it's a severely underrated way of doing things.
Concerning the six things that pop out of the ground, if you can't survive them then don't try. If you can they go for it. Obviously you know to attack the red one by now having played the easier difficulties. If you can get a good angle a Launcher or Slicer can be useful here to, but more likely you'd be best off getting Mechguns and blasting away at the red one until it broke.
The second form's attacks are all a matter of timing, if you're continually dying it's your own fault for not being careful enough. Always stay on full health and know that when you see bright light it is too late to run and you have made a mistake.
