There are about 440 cards in the game. I can't remember fully, but if you want you can count the number of cards I've left space for in the card galleries

As for adding cards. I don't know to be truthful. They are event cards which can only be got during an event (like Easter). I don't know if these are already on the disc, or downloaded. I don't think you can download new cards, just unlock them. For example, you could have got a Famitsu Magazine card from the tourny that was held. But I think this was already on the disc, and just unlocked. I could be wrong though.
And yes, you can exchange cards offline.... although I haven't tried it
