I've never played the original SEGA Dreamcast versions of the game. Having played the Gamecube version only, i can't really give an opinion, but the Gamecube edition of the game is quite big.
Theres many missions that are constantly being updated (e.g. Valentines Quest), and the challenge mode does exist, you have to go online/offline multi-play to be able to attempt it though, you can't do it alone!
