I think the beat theory is true. But that's just me. I think it at least affects rare monster appearances and/or their drops.
I think the offline time is calculated by (obviously) the GC's time, and what version you are using. So it knows where (roughly) you live. So for US version, it might add 7 hours to the time on your GC and work out the beat time from that.
