I don't mean to be picky but for pb's probably Estlla and Mylla & Youlla, the other doesn't matter. I'm pretty sure you can keep defense at 5 if you feed antidotes (or was it antiparalysis?) until dex reaches a certain level, probably by third evolution or something. Dunno if it's possible with a Rati, but I followed the Sato guide (I believe it was here on Ragol.co.uk) and I kept my Sato's def at 5.

As for location, I would probably choose Aldebaran 02-01 but if you prefer another ship then Alphard 06-01 is ok too
